Ingredients

  • 2 lbs lamb cubes
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 tbsp curry powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp chili powder
  • 1 cup coconut milk
  • 1 cup tomato puree
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Chopped cilantro, for garnish

Instructions

  1. In a slow cooker, add the lamb, onion, garlic, ginger, curry powder, cumin powder, coriander powder, turmeric powder, chili powder, coconut milk, tomato puree, and chicken broth. Season with salt and pepper.

  2. Stir well to combine all the ingredients.

  3. Cover the slow cooker and cook on low heat for 6 hours or until the lamb is tender and the flavors have melded together.

  4. Serve the lamb curry over steamed rice or with naan bread.

  5. Garnish with chopped cilantro before serving.
