Ingredients

  • 2 cups of shredded leftover lamb
  • 4 pita breads
  • 1 cup of sliced tomatoes
  • 1 cup of sliced cucumbers
  • 1/2 cup of sliced red onions
  • 1/4 cup of chopped parsley
  • 1/4 cup of chopped mint
  • 1 cup of Greek yogurt
  • 2 cloves of garlic, minced
  • 1 lemon, juiced
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mix together the Greek yogurt, minced garlic, lemon juice, salt, and pepper.

  2. Heat the shredded lamb in a pan over medium-high heat until warmed through.

  3. Warm the pita breads in the microwave or on a hot griddle.

  4. To assemble the shawarma wraps, spread the yogurt sauce onto each pita bread, then add the warmed lamb on top.

  5. Add the sliced tomatoes, cucumbers, and red onions, then sprinkle with parsley and mint.

  6. Roll up the wraps tightly and enjoy!
