Ingredients

  • 2 cups leftover lamb, cut into cubes
  • 1/2 cup plain yogurt
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp cumin
  • 1/2 tsp coriander
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. In a bowl, mix together the yogurt, olive oil, garlic, cumin, coriander, smoked paprika, cayenne pepper, salt, and black pepper.

  2. Add the leftover lamb cubes to the marinade and mix until the lamb is well coated.

  3. Cover with plastic wrap and place in the fridge for 30 minutes to an hour.

  4. Preheat grill or grill pan to medium-high heat.

  5. Thread the lamb cubes onto skewers.

  6. Grill the lamb kebabs for 10-15 minutes, turning occasionally, until cooked to your liking.

  7. Serve hot with naan bread and your favorite dipping sauce.
