How To Make Leftover Lamb Pasta Recipe

A delicious way to use up leftover lamb, mixed with pasta and a rich tomato sauce.

Ingredients

  • 350g pasta
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 400g canned chopped tomatoes
  • 250g leftover cooked lamb, shredded
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Cook pasta according to package instructions, then drain and set aside.

  2. Heat olive oil in a large saucepan over medium heat, then add onion and garlic and cook until softened.

  3. Add canned tomatoes and let simmer for 10 minutes.

  4. Add leftover lamb and let cook for 5-10 minutes until heated through.

  5. Season with salt and pepper to taste.

  6. Add cooked pasta to the sauce and toss to combine.

  7. Serve hot, garnished with chopped parsley if desired.
