How To Make Persian Lamb Tagine

Ingredients

  • 2 lbs lamb, cubed
  • 2 onions, diced
  • 4 cloves of garlic, minced
  • 2 tbsp olive oil
  • 2 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tsp ground turmeric
  • 1 tsp ground paprika
  • 1 cup pitted prunes
  • 1 cup dried apricots
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onions and minced garlic, and cook until they are softened and lightly browned.

  2. Add the cubed lamb to the pot and cook until it is browned on all sides.

  3. Stir in the ground cumin, ground cinnamon, ground turmeric, and ground paprika. Cook for an additional 2 minutes to toast the spices.

  4. Add the pitted prunes, dried apricots, and chicken broth to the pot. Bring to a boil, then reduce heat to low and cover. Simmer for 2 hours, or until the lamb is tender and cooked through.

  5. Season with salt and pepper to taste.

  6. Serve the Persian Lamb Tagine over cooked basmati rice or couscous. Garnish with chopped fresh cilantro.
