How To Make Lamb Shanks with Chickpeas & Moroccan Spices

Ingredients

  • 4 lamb shanks
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 can of chickpeas, drained and rinsed
  • 2 carrots, peeled and diced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground paprika
  • 1 tsp ground turmeric
  • 1 tsp ground cinnamon
  • Salt and pepper to taste
  • 2 cups of beef or vegetable broth
  • 2 tbsp olive oil
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a large oven-safe pot, heat the olive oil over medium heat.

  3. Season the lamb shanks with salt and pepper, then sear them on all sides until browned. Remove and set aside.

  4. In the same pot, add the diced onion and minced garlic. Sauté until softened and fragrant.

  5. Add the ground cumin, ground coriander, ground paprika, ground turmeric, and ground cinnamon. Stir well to coat the onions and garlic in the spices.

  6. Return the lamb shanks to the pot, along with the diced carrots and drained chickpeas. Pour in the broth.

  7. Bring the mixture to a simmer, then cover the pot and transfer it to the preheated oven.

  8. Cook for 2 hours, or until the lamb is tender and falling off the bone.

  9. Remove from the oven and let it rest for a few minutes before serving.

  10. Garnish with fresh cilantro and serve hot.
