A refreshing salad filled with the flavors of leftover lamb and couscous.

Serves:

Ingredients

  • 1 cup couscous, cooked
  • 2 cups leftover lamb, shredded
  • 1/2 red onion, sliced
  • 1 bell pepper, diced
  • 1 cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, mix together cooked couscous, leftover lamb, red onion, bell pepper, cucumber, cherry tomatoes, mint and parsley.

  2. In a small bowl, whisk together lemon juice and olive oil. Add salt and pepper to taste.

  3. Pour dressing over the salad and toss to combine.

  4. Serve immediately.
