How To Make Herby Lamb Burgers with Beetroot Mayo

Ingredients
- 1 lb ground lamb
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 burger buns
- 1 cup arugula
- 1/2 cup crumbled feta cheese
- for the beetroot mayo:
- 1 small beetroot, cooked and peeled
- 1/2 cup mayonnaise
- 1 tbsp lemon juice
- salt and pepper to taste
Instructions

In a mixing bowl, combine the ground lamb, minced garlic, chopped parsley, chopped mint, salt, and black pepper. Mix well.

Divide the mixture into 4 equal portions and shape them into patties.

Preheat a grill or grill pan over medium-high heat. Cook the lamb burgers for about 4-5 minutes per side, or until cooked to your desired level of doneness.

While the burgers are cooking, prepare the beetroot mayo. In a blender or food processor, combine the cooked beetroot, mayonnaise, lemon juice, salt, and pepper. Blend until smooth.

Toast the burger buns on the grill for a minute or two, until slightly crispy.

To assemble the burgers, spread the beetroot mayo on the bottom half of each bun. Place a lamb burger patty on top, followed by some arugula and crumbled feta cheese. Top with the other half of the bun.
