Ingredients

  • 1 lb ground lamb
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 burger buns
  • 1 cup arugula
  • 1/2 cup crumbled feta cheese
  • for the beetroot mayo:
  • 1 small beetroot, cooked and peeled
  • 1/2 cup mayonnaise
  • 1 tbsp lemon juice
  • salt and pepper to taste

Instructions

  1. In a mixing bowl, combine the ground lamb, minced garlic, chopped parsley, chopped mint, salt, and black pepper. Mix well.

  2. Divide the mixture into 4 equal portions and shape them into patties.

  3. Preheat a grill or grill pan over medium-high heat. Cook the lamb burgers for about 4-5 minutes per side, or until cooked to your desired level of doneness.

  4. While the burgers are cooking, prepare the beetroot mayo. In a blender or food processor, combine the cooked beetroot, mayonnaise, lemon juice, salt, and pepper. Blend until smooth.

  5. Toast the burger buns on the grill for a minute or two, until slightly crispy.

  6. To assemble the burgers, spread the beetroot mayo on the bottom half of each bun. Place a lamb burger patty on top, followed by some arugula and crumbled feta cheese. Top with the other half of the bun.

  7. Serve the herby lamb burgers with beetroot mayo immediately.
