  • 200g pitted dates
  • 150g whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 100g unsalted butter, softened
  • 50g brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 150ml boiling water
  • 3 tbsp maple syrup (for the toffee sauce)


  1. Preheat the oven to 180°C (350°F) and grease a baking dish.

  2. Place the dates in a bowl and pour boiling water over them. Let them sit for 10 minutes, then drain.

  3. In a separate bowl, whisk together the flour, baking powder, and baking soda.

  4. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.

  5. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

  6. Gradually fold in the flour mixture and drained dates, alternating between the two until just combined.

  7. Transfer the batter to the greased baking dish and smooth the surface with a spatula.

  8. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

  9. While the pudding is baking, prepare the toffee sauce by gently heating the maple syrup in a small saucepan until warm and runny.

  10. Once the pudding is done, remove it from the oven and let it cool for a few minutes.

  11. Pour the warm toffee sauce over the top of the pudding, allowing it to soak in.

  12. Serve the sticky toffee pudding warm, with extra toffee sauce drizzled on top, if desired.
