This recipe can be easily modified with fruit sauce or chocolate pudding.

How To Make Vanilla Cornstarch Pudding

  • 2 cups milk
  • 1/4 cup sugar
  • 3 Tbsp. cornstarch
  • 1/4 cup sugar
  • few grains salt
  • 1/2 tsp. vanilla
  1. Scald milk, leaving about 2 Tbsp. in cup Mix cornstarch, sugar and salt with cold milk.
  2. Add scalded milk to this mixture, stirring until blended.
  3. Re¬turn to double boiler.
  4. Cook 10 minutes and remove from heat, cool.
  5. Add vanilla.
  6. Pour into individual moulds or into one large mould which has been rinsed in cold water.
  7. Chill.
  8. Suggestion: Less cornstarch may be used to make a thinner pudding which will not mould.
  9. Variations Serve with milk, cream, soft custard, chocolate sauce, fruit sauce, or garnish with bananas or crushed fruit.
  10. For chocolate pudding, follow the same recipe adding 3 Tbsp.
  11. cocoa and 2 additional Tbsp. sugar.

Ingredients

  • 2 cups milk
  • ¼ cup sugar
  • 3 Tbsp cornstarch
  • ¼ tsp salt
  • ½ tsp vanilla

Instructions

  1. In a medium saucepan over medium heat, scald milk until bubbles form at edges.

  2. Combine sugar, cornstarch, and salt in a bowl then add the scalded milk, stirring until blended.

  3. Return to double boiler and continue to cook and stir until mixture thickens enough to coat the back of a metal spoon.

  4. Cook for 10 minutes and remove from heat then cool.

  5. Add vanilla.

  6. Pour into individual molds or into one large mold which has been rinsed in cold water. Chill.

Variations

  1. Serve with milk, cream, soft custard, chocolate sauce, fruit sauce, or garnish with bananas or crushed fruit.

  2. For chocolate pudding, follow the same recipe adding 3 tablespoons of cocoa and 2 additional tablespoons of sugar.

Recipe Notes
