Ingredients

  • 100g self-raising flour
  • 100g unsalted butter, softened
  • 100g caster sugar
  • 2 large eggs
  • 1 tsp almond extract
  • 50g ground almonds
  • 2 tbsp cherry jam
  • 100g fresh cherries, pitted and halved
  • 2 tbsp flaked almonds

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.

  3. Beat in the eggs one at a time, followed by the almond extract.

  4. Fold in the flour and ground almonds until well combined.

  5. Spoon half of the cake batter into a greased baking dish.

  6. Spread the cherry jam evenly over the batter.

  7. Scatter the cherry halves on top of the jam.

  8. Spoon the remaining batter over the cherries.

  9. Sprinkle with flaked almonds.

  10. Bake in the preheated oven for 35-40 minutes, or until golden and cooked through.

  11. Serve warm with custard or cream.
