Ingredients

  • 1 cup strawberries, chopped
  • 1/4 cup sugar
  • 1/4 cup water
  • 1 tbsp lemon juice
  • 2 tbsp cornstarch
  • 2 cups milk
  • 1 tsp vanilla extract
  • 1/2 cup whipped cream
  • Fresh strawberries for garnish

Instructions

  1. In a saucepan, combine the chopped strawberries, sugar, water, and lemon juice. Cook over medium heat until the strawberries are soft and mushy.

  2. In a small bowl, mix the cornstarch with a little bit of water to create a slurry. Add the slurry to the strawberry mixture and stir until thickened.

  3. In a separate saucepan, heat the milk until just simmering. Remove from heat and stir in the vanilla extract.

  4. Gradually pour the hot milk into the strawberry mixture, stirring constantly.

  5. Divide the pudding into serving dishes and refrigerate for at least 2 hours, or until set.

  6. Top each serving with a dollop of whipped cream and garnish with fresh strawberries.
