How To Make Spiced Rice Pudding with Blackberry Compote

Ingredients
- 1 cup of arborio rice
- 4 cups of whole milk
- 1/2 cup of granulated sugar
- 1 cinnamon stick
- 1/2 teaspoon of ground cardamom
- 1/4 teaspoon of ground nutmeg
- 1/4 teaspoon of salt
- 1 teaspoon of vanilla extract
- 1 cup of fresh or frozen blackberries
- 2 tablespoons of honey
- 1 tablespoon of lemon juice
- 1/4 cup of chopped almonds (optional, for garnish)
Instructions

In a large saucepan, combine the rice, milk, sugar, cinnamon stick, cardamom, nutmeg, and salt. Bring to a boil over medium heat, then reduce to low heat and simmer for 30 minutes, or until the rice is tender and the mixture has thickened, stirring occasionally.

Remove the cinnamon stick and stir in the vanilla extract. Let cool for a few minutes.

Meanwhile, in a separate saucepan, combine the blackberries, honey, and lemon juice. Cook over medium heat for 5-7 minutes, or until the blackberries soften and release their juices, stirring occasionally. Remove from heat and allow to cool slightly.

Divide the rice pudding among serving bowls and top each with a spoonful of the blackberry compote. Sprinkle with chopped almonds if desired.
