How To Make Rhubarb Steamed Pudding

Ingredients
- 2 cups diced rhubarb
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup milk
- 1/4 cup unsalted butter, melted
- 1 tsp vanilla extract
Instructions

Grease a 1.5-quart pudding basin or steamer mold.

In a mixing bowl, combine the flour, sugar, baking powder, and salt.

Add the diced rhubarb and toss until coated in the flour mixture.

In a separate bowl, whisk together the milk, melted butter, and vanilla extract.

Pour the wet ingredients into the dry ingredients and mix until just combined.

Transfer the batter to the greased pudding basin and smooth the top.

Cover the basin with a double layer of greased parchment paper or aluminum foil, then secure with kitchen twine.

Place the pudding basin in a large pot with a tight-fitting lid.

Pour enough water into the pot to come halfway up the sides of the basin.

Bring the water to a simmer over medium heat, then reduce the heat to low.

Cover the pot and steam the pudding for 1 hour and 30 minutes, or until a toothpick inserted into the center comes out clean.
