Ingredients

  • 1cupall-purpose flour
  • ½cupwhite sugar
  • 1tspbaking powder
  • 1pinchsalt
  • 1egg
  • 1tbspbutter,melted
  • ½cupmilk

For Rhubarb Mixture:

  • 4cupsrhubarb,sliced
  • 2cupswhite sugar
  • cupsboiling water

Instructions

  1. Preheat an oven to 375 degrees F. Whisk the flour, sugar, baking powder, and salt in a mixing bowl; set aside. Grease a 9×13-inch baking dish.

  2. Beat the egg, butter, and milk in a bowl until smooth. Stir in the flour mixture until moistened, then spread into the prepared baking dish.

Rhubarb Mixture:

  1. Stir together the rhubarb, sugar, and water; pour into the baking dish.

  2. Bake in the preheated oven for about 40 minutes until the dough has set and the rhubarb is bubbly.
