Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup breadcrumbs
  • 1/2 cup shredded suet
  • 1/2 cup brown sugar
  • 1/2 cup raisins
  • 1/2 cup currants
  • 1/4 cup chopped almonds
  • 1/4 cup grated carrot
  • 1/4 cup grated apple
  • 1/4 cup grated pear
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs, beaten
  • 1/4 cup milk
  • 2 tbsp brandy (optional)
  • 1 tbsp butter, melted

Instructions

  1. In a large mixing bowl, combine the flour, breadcrumbs, suet, brown sugar, raisins, currants, almonds, grated carrot, grated apple, grated pear, cinnamon, nutmeg, cloves, baking powder, and salt.

  2. In a separate bowl, whisk together the beaten eggs, milk, and brandy (if using).

  3. Pour the wet ingredients into the dry ingredients and mix well to form a sticky batter.

  4. Grease a heatproof bowl with the melted butter and spoon the batter into it, pressing it down lightly.

  5. Cover the bowl tightly with a double layer of greased parchment paper or aluminum foil.

  6. Place the bowl in a large saucepan and fill the pan with enough boiling water to reach halfway up the side of the bowl.

  7. Cover the saucepan with a lid and steam the pudding on low heat for 2 hours, checking occasionally to ensure the water hasn’t evaporated completely.

  8. Carefully remove the bowl from the saucepan and let it cool for a few minutes.

  9. Invert the pudding onto a serving plate and remove the parchment paper or foil.

  10. Serve the plum pudding warm, drizzled with custard or brandy sauce, and enjoy!
