Preparation: 15 minutes
Cooking: 12 minutes
Total: 27 minutes

  • 1/2 cup (115g) unsalted butter, plus extra for greasing
  • 1/2 cup (100g) packed brown sugar
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 cup (65g) all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 cup (60ml) toffee sauce, plus extra for serving
  • Powdered sugar, for dusting

  1. Preheat the oven to 350°F (180°C). Grease 4 ramekins with butter.

  2. In a saucepan, melt the butter and brown sugar over medium heat until smooth. Remove from heat and let cool slightly.

  3. In a mixing bowl, whisk the eggs and vanilla extract together. Gradually add the melted butter mixture and whisk until well combined.

  4. In a separate bowl, sift the flour and baking powder together. Gently fold the flour mixture into the egg mixture until just combined.

  5. Divide the batter evenly among the prepared ramekins. Place a spoonful of toffee sauce in the center of each ramekin, pressing it down slightly.

  6. Bake in the preheated oven for 12 minutes, or until the edges are set but the centers are still slightly jiggly.

  7. Remove from the oven and let cool for a few minutes. Carefully invert each pudding onto a plate, tapping the bottom to release.

  8. Serve warm, drizzled with extra toffee sauce and dusted with powdered sugar.
