Ingredients

  • 1 cup brown rice
  • 2 cups unsweetened almond milk
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 cup raisins
  • 1/4 cup chopped almonds
  • Fresh berries, for topping

Instructions

  1. In a saucepan, combine rice, almond milk, honey, vanilla extract, cinnamon, cardamom, nutmeg, ginger, and salt.

  2. Bring to a boil, then reduce heat to low and cover.

  3. Simmer for 30-40 minutes, or until rice is cooked and the mixture thickens, stirring occasionally.

  4. Stir in raisins and chopped almonds.

  5. Remove from heat and let cool for a few minutes. Serve warm or chilled.

  6. Top with fresh berries before serving.
