How To Make Festive Date & Pecan Pudding

Ingredients
- 1 cup chopped dates
- 1 cup pecans, chopped
- 1 cup water
- 1 tsp vanilla extract
- 1/2 cup brown sugar
- 1/2 cup all-purpose flour
- 1/4 tsp baking powder
- 1/4 tsp salt
- 4 tbsp unsalted butter, melted
Instructions

Preheat the oven to 350°F (175°C).

In a saucepan, combine the dates, pecans, water, and vanilla extract. Bring to a boil and simmer for 5 minutes.

In a separate bowl, mix together the brown sugar, flour, baking powder, and salt.

Add the melted butter to the dry ingredients and mix until crumbly.

Spread half of the date mixture in a greased baking dish.

Sprinkle half of the crumb mixture over the dates.

Repeat with the remaining date mixture and crumb mixture.

Bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the pudding comes out clean.

Serve warm with whipped cream or vanilla ice cream.
