Preparation: 15 minutes
Cooking: 40 minutes
Total: 55 minutes

Serves:

Ingredients

  • 1 cup cranberries, fresh or frozen
  • 1/4 cup maple syrup
  • 1/4 cup pecans, chopped
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • Powdered sugar, for dusting
  • Vanilla ice cream, for serving

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish.

  2. In a small saucepan, combine cranberries and maple syrup. Cook over medium heat until cranberries burst, about 5 minutes. Remove from heat and stir in pecans.

  3. In a medium bowl, whisk together flour, sugar, baking powder, and salt. In a separate bowl, mix together milk, melted butter, and vanilla extract. Add the wet ingredients to the dry ingredients and stir until just combined.

  4. Pour the cranberry mixture into the prepared baking dish. Spoon the batter evenly over the cranberry mixture.

  5. Bake for 35-40 minutes, or until golden brown and a toothpick inserted into the center comes out clean.

  6. Remove from the oven and let it cool for a few minutes. Dust with powdered sugar and serve warm with a scoop of vanilla ice cream.
