How To Make Chocolate & Almond Puds with Boozy Hot Chocolate Sauce

  • 100g dark chocolate, chopped
  • 75g unsalted butter, plus extra for greasing
  • 100g ground almonds
  • 50g caster sugar
  • 2 large eggs, beaten
  • 1 tbsp cocoa powder
  • 1/2 tsp almond extract
  • 1/4 tsp salt
  • 100ml double cream
  • 50ml whole milk
  • 2 tbsp icing sugar
  • 2 tbsp Amaretto liqueur (optional)
  • Whipped cream and toasted almond flakes, for serving


  1. Preheat the oven to 180°C (350°F). Grease 4 ramekins with butter.

  2. Melt the dark chocolate and butter together in a heatproof bowl set over a saucepan of simmering water, stirring until smooth. Remove from heat and let it cool slightly.

  3. In a separate bowl, mix together the ground almonds, caster sugar, cocoa powder, almond extract, and salt.

  4. Gradually whisk in the beaten eggs and melted chocolate-butter mixture until well combined.

  5. Divide the mixture evenly among the greased ramekins. Place them on a baking tray and bake for about 20-25 minutes, until the tops are just set.

  6. While the puds are baking, make the boozy hot chocolate sauce. In a small saucepan, heat the cream, milk, icing sugar, and Amaretto (if using) over low heat until hot but not boiling.

  7. Serve the Chocolate & Almond Puds warm, drizzled with the boozy hot chocolate sauce. Top with whipped cream and toasted almond flakes.
