Ingredients

  • 100g dark chocolate, chopped
  • 100g amaretti cookies, crushed
  • 50g unsalted butter
  • 2 eggs
  • 50g granulated sugar
  • 1 tsp vanilla extract
  • 2 tbsp all-purpose flour
  • Pinch of salt
  • Powdered sugar, for dusting

Instructions

  1. Preheat oven to 180°C (350°F).

  2. Melt the dark chocolate and butter in a heatproof bowl over simmering water.

  3. In a separate bowl, whisk together the eggs, sugar, and vanilla extract until well combined.

  4. Gradually add the melted chocolate mixture to the egg mixture, whisking constantly.

  5. Fold in the crushed amaretti cookies, flour, and salt until fully incorporated.

  6. Divide the mixture evenly among 4 greased ramekins or oven-safe dishes.

  7. Place the ramekins on a baking sheet and bake for 25-30 minutes, or until the puddings have set around the edges but are still slightly soft in the center.

  8. Remove from the oven and let cool for a few minutes. Dust with powdered sugar before serving.
