How To Make Chocoholic’s Christmas Pudding

This sweet, delectable dessert is the perfect ender to any and every heavy meal! In fact, it’s great even as a stand-alone snack. Ingredients

  • 200g dark chocolate, chopped
  • 100g unsalted butter
  • 150g granulated sugar
  • 3 large eggs
  • 150g all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 150g mixed dried fruits (such as raisins, currants, and cherries)
  • 50g chopped nuts (such as almonds or walnuts)
  • Icing sugar, for dusting

Instructions

  1. Preheat the oven to 325°F (160°C). Grease a 1.5-quart pudding basin.

  2. In a heatproof bowl, melt the chocolate and butter together in the microwave or over a double boiler. Let it cool for a few minutes.

  3. In a separate large bowl, beat the sugar and eggs together until creamy. Gradually add the melted chocolate mixture and mix well.

  4. Sift in the flour, baking powder, and salt. Stir until just combined.

  5. Add the milk and vanilla extract, and mix until smooth.

  6. Fold in the dried fruits and chopped nuts.

  7. Pour the mixture into the greased pudding basin. Smooth the surface.

  8. Cover the basin tightly with a double layer of aluminum foil. Place it in a large baking dish and pour hot water into the dish until it reaches halfway up the sides of the pudding basin.

  9. Bake for 2 hours or until a skewer inserted into the center comes out clean.

  10. Remove the pudding basin from the water bath and let it cool for 10 minutes. Then, carefully invert the pudding onto a serving plate.

  11. Dust with icing sugar before serving.
