  • 1 cup whole wheat flour
  • 1/2 cup pumpkin puree
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey
  • 1/4 cup vegetable oil
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.

  2. In a mixing bowl, combine the pumpkin puree, applesauce, honey, vegetable oil, and eggs. Mix well.

  3. In a separate bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

  5. Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full.

  6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  7. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
