How To Make Mocha Muffins
These bakery-style mocha muffins are light and fluffy sweet treats, packed with hints of coffee and cinnamon. Whip these up in just 35 minutes!

Ingredients
- 1egg
- 2egg whites
- ½cupmilk
- 1tbspinstant coffee powder
- 1tbspwater
- 2tspvanilla extract
- 1½cupsall purpose flour
- ½cupmalted milk powder
- ½cupwhite sugar,plus 2 tbsp for sprinkling
- 2tspbaking powder
- ½tspsalt
- ½tspground cinnamon,for sprinkling
Instructions

Preheat the oven to 400 degrees F. Grease the muffin cups.

Mix together the egg, egg whites, and milk. Stir in the coffee powder, water, and vanilla.

In a large bowl, mix together the flour, malted milk powder, sugar, baking powder, and salt. Stir in the liquid mixture. Mix together really well, until batter is thin and gooey like cake batter.

Fill the muffin cups to ⅔ full.

In a small bowl, stir together cinnamon and sugar. Sprinkle cinnamon sugar over muffins.

Bake in the oven for 20 to 25 minutes.
