How To Make Pumpkin Applesauce Muffins

With hints of earthy spices, greet the fall season with these moist and dense muffins that are topped with pumpkin applesauce for the ultimate baked treat!

Ingredients

  • tbspbutter
  • 3cupsall purpose flour
  • 2tspbaking soda
  • ½tspbaking powder
  • 2tspground cinnamon
  • ½tspground cloves
  • ½tspfreshly grated nutmeg
  • 1tspsalt
  • 1stickunsalted butter
  • 2cupssugar
  • 4largeeggs
  • 1cupapplesauce
  • 1cuppumpkin,canned, mashed
  • 1tspvanilla extract
  • cupapple juice,cider or orange juice
  • cupraisins

Instructions

  1. Preheat oven to 375 degrees F. Grease 12 half-cup muffin cups with melted butter. In a medium bowl, combine flour, baking soda, baking powder, cinnamon, cloves, nutmeg, and salt; set aside.

  2. In a large mixing bowl, beat butter and sugar for 2 to 3 minutes until creamy. Beat in eggs, applesauce, pumpkin, and vanilla until blended. Add dry ingredients, alternating with the juice, beginning and ending with the dry mixture; mix until smooth.

  3. Fold in raisins.

  4. Spoon batter into prepared muffin cups, filling each cup ⅔ full. Bake on center oven rack for 20 to 25 minutes until a toothpick inserted in the center of each muffin comes out clean. Repeat steps 1 through 3 with the remaining batter.

  5. Remove from oven and allow muffins to cool in the pans several minutes; turn muffins out onto a rack. Serve warm or at room temperature.
