How To Make Pumpkin Applesauce Muffins

- 1½tbspbutter
- 3cupsall purpose flour
- 2tspbaking soda
- ½tspbaking powder
- 2tspground cinnamon
- ½tspground cloves
- ½tspfreshly grated nutmeg
- 1tspsalt
- 1stickunsalted butter
- 2cupssugar
- 4largeeggs
- 1cupapplesauce
- 1cuppumpkin,canned, mashed
- 1tspvanilla extract
- ⅓cupapple juice,cider or orange juice
- 1½cupraisins
Instructions

Preheat oven to 375 degrees F. Grease 12 half-cup muffin cups with melted butter. In a medium bowl, combine flour, baking soda, baking powder, cinnamon, cloves, nutmeg, and salt; set aside.

In a large mixing bowl, beat butter and sugar for 2 to 3 minutes until creamy. Beat in eggs, applesauce, pumpkin, and vanilla until blended. Add dry ingredients, alternating with the juice, beginning and ending with the dry mixture; mix until smooth.

Fold in raisins.

Spoon batter into prepared muffin cups, filling each cup ⅔ full. Bake on center oven rack for 20 to 25 minutes until a toothpick inserted in the center of each muffin comes out clean. Repeat steps 1 through 3 with the remaining batter.

Remove from oven and allow muffins to cool in the pans several minutes; turn muffins out onto a rack. Serve warm or at room temperature.
