How To Make Ricotta Cheese Chocolate Chip Muffins

  • 2cupsself rising cake flour,like Presto
  • ½tspbaking soda
  • 3tbspunsalted butter,or ¼ cup I Can’t Believe It’s Not Butter! Light Spread
  • ¾cupsugar
  • 3large egg whites
  • 8ozricotta cheese,fat free
  • ½tbspvanilla
  • tbspmini semi-sweet chocolate chip morsels


  1. Preheat the oven to 375 degrees F. Line a muffin tin with 12 to 18 liners.

  2. In a medium bowl, mix the flour and baking soda.

  3. Mix and cream the butter and sugar with a hand mixer in a large bowl.

  4. Beat the egg whites in a small bowl, then add it to the butter-sugar mixture.

  5. Mix in the ricotta cheese, then flour mixture and vanilla, then mix well. Fold in the chocolate chips, then spoon the batter into the lined muffin tins about ¾ full.

  6. Bake for about 15 to 18 minutes. Let it cool.

  7. Serve with tea or coffee, and enjoy!
