How To Make Ricotta Cheese Chocolate Chip Muffins

Ingredients
- 2cupsself rising cake flour,like Presto
- ½tspbaking soda
- 3tbspunsalted butter,or ¼ cup I Can’t Believe It’s Not Butter! Light Spread
- ¾cupsugar
- 3large egg whites
- 8ozricotta cheese,fat free
- ½tbspvanilla
- 9¾tbspmini semi-sweet chocolate chip morsels
Instructions

Preheat the oven to 375 degrees F. Line a muffin tin with 12 to 18 liners.

In a medium bowl, mix the flour and baking soda.

Mix and cream the butter and sugar with a hand mixer in a large bowl.

Beat the egg whites in a small bowl, then add it to the butter-sugar mixture.

Mix in the ricotta cheese, then flour mixture and vanilla, then mix well. Fold in the chocolate chips, then spoon the batter into the lined muffin tins about ¾ full.

Bake for about 15 to 18 minutes. Let it cool.
