How To Make Ricotta Cheese Chocolate Chip Muffins
Start your day with a cheesy sweetness-overloaded bite of these ricotta cheese chocolate chip muffins makeover! Makes a good pair with a cup of hot choco.
Ingredients
- 2cupsself rising cake flour,presto
- ½tspbaking soda
- 3tbspunsalted butter,or ¼ cup I Can’t Believe It’s Not Butter! Light Spread
- ¾cupsugar
- 3large egg whites
- 8ozfat free ricotta cheese
- ½tbspvanilla
- 9¾tbspmini semi-sweet chocolate chip morsels
Instructions

Preheat oven to 375 degrees F. Line a muffin tin with 12 to 18 liners.

In a medium bowl, mix flour and baking soda.

Mix and cream butter and sugar with a hand mixer in a large bowl.

Beat egg whites in a small bowl and add to butter/sugar mixture.

Mix in ricotta cheese, then flour mixture and vanilla; mix well. Fold in chocolate chips and spoon into lined muffin tins about ¾ filled.

Bake at 375 degrees F for about 15 to 18 minutes. Let it cool.
