  • cups all-purpose flour
  • 1 cup white sugar
  • ¼ cup brown sugar
  • 3 tsp baking powder
  • ½ tsp salt
  • ½ cup apple juice
  • ¾ cup vegetable oil, or any neutral oil such as canola oil, grapeseed oil, sunflower oil, and corn oil
  • 1 cup buttermilk
  • 1 tsp ground cinnamon
  • 3 cups apples, peeled, cored and grated
  • 2 pcs eggs
  • 1 tsp vanilla syrup


  1. Heat oven to 400 degrees F.
  2. Grease bottoms only of 12 muffin cups or line with muffin liners.
  3. In a medium bowl, combine flour, sugar, baking powder, cinnamon, and salt; mix well.
  4. In a large bowl, combine apple juice, oil, buttermilk, vanilla syrup, and egg; blend well.
  5. Add dry ingredients all at once; stir just until dry ingredients are moistened. *
  6. Stir in chopped apples.
  7. Fill the cups roughly ⅔ to ¾ full.
  8. Bake for 22 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool 1 minute before removing from pan.
  10. Serve warm.
