Simple Banana Nut Muffins Recipe

Banana nut muffins make for a great morning. This recipe is so simple to make that you can do it in the morning while you’re getting ready. You’ll have warm muffins to enjoy on your way to work then.


This muffin recipe will awe you with its creaminess and sweetness from the bananas plus adding some texture and a hint of earthiness from the nuts.

Ingredients

  • 1 ⅔ cup flour
  • 3 bananas
  • cup sugar
  • 1 egg
  • 1 tsp. vanilla
  • cup butter
  • ½ tsp. cinnamon
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • pinch salt
  • cup brown sugar
  • 2 Tbsp. oats
  • cup pecans, chopped

Instructions

  1. Preheat oven to 375 degrees.
  2. Line a muffin tray with liners.
  3. Mash bananas in a bowl.
  4. Add sugar, egg, vanilla, and melted butter

  5. In another bowl, mix flour, cinnamon, baking soda, baking powder, and salt.

  6. Combine both bowls and stir evenly.

  7. Pour batter into muffin tins.
  8. In a bowl, mix together remaining flour, brown sugar, butter, oats and pecans and stir.
  9. Use mixture to cover each muffin.
  10. Bake for 20 minutes, or until golden brown. Serve warm.
