  • 2 ripe bananas, mashed
  • 1/3 cup of melted butter
  • 3/4 cup of sugar
  • 1 egg, beaten
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of baking soda
  • Pinch of salt
  • 1 1/2 cups of all-purpose flour


  1. Preheat oven to 375°F (190°C). Grease a muffin tin or line with paper liners.

  2. In a large bowl, mix together mashed bananas, melted butter, sugar, beaten egg, and vanilla extract.

  3. In a separate bowl, whisk together flour, baking soda, and salt.

  4. Gradually add the dry ingredients to the banana mixture, stirring until just combined.

  5. Spoon the batter into the prepared muffin tin, filling each cup 2/3 full.

  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

  7. Allow muffins to cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
