  • 1cupraisins
  • 1cuphot coffee,strong brewed
  • cupsall purpose flour
  • ½cupsugar
  • 1tbspbaking powder
  • ½tspcinnamon
  • ½tspkosher salt
  • 1cupmilk
  • 8tbspunsalted butter
  • 1large egg
  • tspvanilla
  • 1tspinstant espresso granules or instant coffee
  • ½cupwalnuts,chopped


  1. In a medium bowl, combine raisins and hot coffee; allow to steep 30 minutes. Strain out liquid; set raisins aside.

  2. Preheat oven to 400 degrees. In a large bowl, combine flour, half a cup sugar, baking powder, cinnamon, and salt. In another bowl, whisk together milk, butter, egg, vanilla, and coffee granules until blended.

  3. Spoon batter into 12 paper-lined muffin cups. Sprinkle with remaining 3 tablespoons sugar.

  4. Bake for 20 to 25 minutes, until a toothpick inserted into center of a muffin comes out clean. Serve warm straight from pan.
