How To Make Make Ahead Egg Muffins

Never rush breakfast. Enjoy these moist and flavorful make-ahead egg muffins made of simple ingredients like sausages and cheese for a quick, filling dish.

  • 1lbground sausage,or ham
  • 12large eggs
  • ½red pepper,diced
  • 3tbsponion,minced
  • 1cupcheddar cheese
  • ½cupmozzarella cheese


  1. Preheat oven to 350 degrees F.

  2. Brown sausage over medium high until no pink remains.

  3. Spray a muffin tin with cooking spray. Divide the red pepper, onion, cooked sausage and cheeses over 12 wells.

  4. In a large bowl combine eggs, salt, and pepper to taste. Pour egg mixture over the sausage in each well.

  5. Bake 22 to 25 minutes or until set.

  6. Remove from cups and serve warm. Enjoy!
