  • 1 cup whole wheat flour
  • 1/2 cup rolled oats
  • 1/4 cup honey
  • 1/4 cup Greek yogurt
  • 1/4 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 ripe banana, mashed
  • 1/2 cup blueberries
  • 1/4 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.

  2. In a large mixing bowl, combine the whole wheat flour, rolled oats, baking powder, baking soda, cinnamon, and salt.

  3. In a separate bowl, whisk together the honey, Greek yogurt, applesauce, almond milk, and mashed banana.

  4. Pour the wet ingredients into the dry ingredients and gently stir until just combined.

  5. Gently fold in the blueberries and chopped walnuts.

  6. Divide the batter evenly among the muffin cups, filling each about three-quarters full.

  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

  8. Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
