How To Make Chocolate Chip Zucchini Muffins

Zucchini muffins are a healthy way to enjoy a sweet treat at breakfast. They’re studded with rich chocolate bits for some surprise pops of deliciousness.

Preparation: 10 minutes
Cooking: 20 minutes
Total: 30 minutes

Serves:

Ingredients

  • cupsall purpose flour
  • 1cupsugar
  • 1tspbaking soda
  • 1tspcinnamon
  • pinch of salt
  • 1egg,lightly beaten
  • ½cupvegetable oil
  • 1tspvanilla
  • ¼cupmilk
  • 1cupzucchini,(shred and wring out with paper towel)
  • 1cupchocolate chips
  • ½cupwalnuts,chopped, optional

Instructions

  1. Preheat oven to 350 degrees F. Line a muffin tin with liners or grease each tin.

  2. In a medium sized bowl combine flour, sugar, baking soda, cinnamon and salt. In a small bowl combine the egg, vegetable oil, vanilla, and milk. Add to the dry ingredients and mix until combined.

  3. Fold in zucchini, chocolate chips and walnut. Scoop the batter and fill ½ full. Bake for 15 to 20 minutes or until a toothpick comes out clean and lightly brown.
