How To Make Bran Muffins

Have a soft delightful treat with these bran muffins baked with buttermilk, raisin and whole bran cereal. Whip up a batch in 30 minutes!

Ingredients

  • 2cupsraisin bran cereal
  • 4cupswhole bran cereal
  • 2cupsboiling water
  • 1cupshortening
  • 3cupswhite sugar
  • 4eggs
  • 4cupsbuttermilk
  • 5cupsall purpose flour
  • 5tspbaking soda
  • tspsalt

Instructions

  1. Mix cereal and boiling water together in a metal bowl, and allow to cool.

  2. Cream shortening, sugar, and eggs in a large bowl. Add buttermilk and cooled cereal mixture.

  3. Combine flour, baking soda, and salt; stir into the creamed mixture until flour is moistened. The batter should be lumpy.

  4. Put batter into a 1-gallon wide mouth jar. When using a mix, use a ladle to get the batter out of the jar. Don’t mix or stir.

  5. When ready to use, spoon batter into muffin tins. Bake at 375 degrees F for approximately 15 minutes.
