How To Make Banana Pecan Crunch Muffins

Nutritious snack or dessert, these banana pecan crunch muffins are soft and moist. Topped with pecans for that delicious sweet crunch!

Ingredients

For Muffins:

  • cupsflour
  • ½tspcinnamon
  • 1tspbaking powder
  • 1tspbaking soda
  • ¼tspsalt
  • 3ripe bananas,mashed
  • cupsugar
  • 1tspvanilla
  • ½cupmelted butter

For Crunch Topping:

  • cupbrown sugar,packed
  • 2tbspflour
  • 2tbspbutter
  • 2tbspoats
  • cupchopped pecans

Instructions

  1. Preheat oven to 375 degrees F. Line a muffin pan with paper liners.

  2. Combine flour, cinnamon, baking soda, baking powder, and salt in a large bowl.

  3. In a separate bowl, mix together mashed bananas, sugar, egg, vanilla, and butter. Add in flour mixture and stir just until combined; do not overmix. Divide batter evenly over 12 muffin cups.

  4. In a small bowl, combine flour, brown sugar, and butter until mixed. Stir in oats and pecans. Divide topping over muffins.

  5. Bake for about 18 to 20 minutes or until a toothpick comes out clean.
