  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 1 1/2 cups peeled and diced apples
  • 1/2 cup chopped walnuts (optional)
  • 1/4 cup rolled oats

Instructions

  1. Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners.

  2. In a large bowl, combine the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.

  3. In a separate bowl, whisk together the melted butter, buttermilk, and vanilla extract.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced apples and walnuts.

  5. Divide the batter evenly among the prepared muffin cups. Sprinkle the rolled oats on top of each muffin.

  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

  7. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
