Ingredients

  • 2 cups of all-purpose flour
  • 1/2 cup of granulated sugar
  • 2 tsp of baking powder
  • 1/2 tsp of salt
  • 1 cup of milk
  • 1/4 cup of unsalted butter, melted
  • 1 tsp of vanilla extract
  • 2 eggs
  • 1 cup of your choice of filling (e.g. chocolate chips, blueberries, diced apples, etc.)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin with cooking spray or liners.

  2. In a large bowl, combine the flour, sugar, baking powder, and salt.

  3. In a separate bowl, whisk together the milk, melted butter, vanilla extract, and eggs.

  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

  5. Gently fold in your choice of filling.

  6. Divide the batter evenly among the muffin cups, filling each about 3/4 full.

  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

  8. Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.

  9. Serve and enjoy!
