How To Make Mint Chocolate Chip Brookies

Add a new twist to brownies and cookies by turning them into luscious brookies! It’s a rich, chocolatey, and refreshing sweet treat to try after a big meal.

For Brownie Base:

  • ¾cupunsalted butter,melted
  • cupswhite sugar
  • 2tspvanilla extract
  • 3large eggs
  • ¾cupunsweetened cocoa powder
  • ¾tspsalt
  • cupsall-purpose flour
  • ¾cupdark chocolate chips

For Mint Chocolate Chip Cookie Layer:

  • 1cupbutter,softened
  • cupssugar
  • 3large eggs
  • 1tspmint extract
  • 10dropsgreen food coloring
  • cupsflour
  • 2tspbaking powder
  • 1tspbaking soda
  • 1tspcream of tartar
  • ½tspsalt
  • 12ozdark chocolate chips


  1. Preheat the oven to 350 degrees F. Grease or use baking spray on a 9×13-inch baking pan.

Brownie Base:

  1. In a large bowl or stand mixer, add the melted butter, sugar, eggs, and vanilla, then whisk together until well combined.

  2. Add the cocoa powder and salt to the bowl, and mix well. Then, add in the flour and chocolate chips, and mix until just combined.

  3. Using a spatula, pour the mixture into the bottom of the pan and spread.

  4. Bake for 20 to 25 minutes.

Mint Chocolate Chip Cookie Layer:

  1. Add the butter, sugar, eggs, mint extract, and green food coloring to a stand mixer, then mix on high for 2 to 3 minutes until well blended.

  2. Add the flour, baking powder, baking soda, cream of tartar, salt, and dark chocolate, then turn the mixer on low and mix until combined.

  3. Using a large spoon or hands, drop chunks of mint chocolate chip cookie dough gently over the baked brownie layer.

  4. Bake for 25 to 30 minutes, until the dough is just set.

  5. Cool completely before cutting, then serve, and enjoy!
