Ingredients

  • ½stickunsalted butter,or nondairy margarine
  • ¾cuplight brown sugar,packed
  • 2large egg yolks
  • 1tspvanilla extract
  • 8ozbittersweet chocolate
  • ½cupmatzo meal
  • ¼tspcoarse salt
  • 4large egg whites
  • 8ozsemisweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees F.

  2. Beat butter or margarine and sugar with a mixer on medium-high speed until fluffy. Beat in egg yolks and vanilla. Add chocolate, matzo meal, and salt. Beat until mixture just comes together.

  3. In a clean bowl and with a whisk attachment, beat egg whites until stiff peaks form. Gently fold into chocolate mixture. Add chocolate chips, and stir. Let stand for 15 minutes.

  4. Scoop 2-inch balls onto a parchment-lined baking sheet. Bake for 10 to 12 minutes until set. Let cool on sheet on a wire rack for 2 minutes. Transfer cookies to rack, and let cool completely.

  5. Serve and enjoy.
