How To Make Red Skin Potato Mash

Red potatoes are used in this potato mash recipe. Mixed with some warm milk, butter, and scallions, and seasoned with salt to taste.

Ingredients

  • 6lbred potatoes
  • salt
  • ½lbunsalted butter
  • 2cupsmilk,warmed
  • 2scallions
  • freshly ground pepper

Instructions

  1. Put the potatoes in a large pot and cover them with water. Cover the pot and bring it to a boil.

  2. Add a large pinch of salt and boil, uncovered, over moderately high heat, until fork-tender for about 25 minutes.

  3. Drain the potatoes and return to the pot. Shake the pot over moderately high heat to dry the potatoes.

  4. Off the heat, lightly mash the potatoes. Add the butter and milk and mash until incorporated.

  5. Stir in the scallions, season with salt and pepper, and serve.
