How To Make Mashed Cauliflower “Potatoes”
This recipe for mashed cauliflower is a great alternative to the carb-heavy mashed potatoes. It’s creamy, smooth, and satisfying.

Ingredients
- 3lbscauliflower
- 2ozcream cheese
- ¼cupsour cream
- ½tsponion powder
- ⅛tspgarlic powder
- salt & pepper,to taste
- chives and butter for topping
Instructions

Wash cauliflower and boil for about 15 minutes or until very soft.

Drain well. Place cauliflower in a mesh strainer and press to squeeze out as much liquid as possible.

Using a food processor (or immersion hand blender) puree until smooth. Add in cream cheese, sour cream and seasonings. Blend until smooth.

Place back into the pot and heat on the stove on medium low until heated through.
