How To Make Sweet Mashed Potato Pancakes
These mashed potato pancakes are sweetened with corn syrup and spiced with nutmeg, then cooked into a moist and golden breakfast dish.
Ingredients
- 2cupsall purpose flour,sifted
- 1tspsalt
- 1tbspbaking powder
- 3potatoes,peeled, boiled and mashed
- 1onion,chopped
- 2eggs
- 1cupmilk
- ¼cuplight corn syrup
- 1tspground nutmeg
- 2tbspshortening
Instructions

In a medium bowl, mix together flour, salt, and baking powder. Stir in mashed potatoes and onion until thoroughly combined.

In a separate bowl, whisk together eggs and milk, and stir lightly into the potato mixture. Stir in corn syrup and nutmeg, mixing well.

Heat a large griddle to medium-high heat. Coat with shortening and spoon potato mixture onto a griddle in 12 equal portions.
