These mashed potato pancakes are sweetened with corn syrup and spiced with nutmeg, then cooked into a moist and golden breakfast dish.

Ingredients

  • 2cupsall purpose flour,sifted
  • 1tspsalt
  • 1tbspbaking powder
  • 3potatoes,peeled, boiled and mashed
  • 1onion,chopped
  • 2eggs
  • 1cupmilk
  • ¼cuplight corn syrup
  • 1tspground nutmeg
  • 2tbspshortening

Instructions

  1. In a medium bowl, mix together flour, salt, and baking powder. Stir in mashed potatoes and onion until thoroughly combined.

  2. In a separate bowl, whisk together eggs and milk, and stir lightly into the potato mixture. Stir in corn syrup and nutmeg, mixing well.

  3. Heat a large griddle to medium-high heat. Coat with shortening and spoon potato mixture onto a griddle in 12 equal portions.

  4. Fry until brown on both sides. Serve hot.
