How To Make Mashed Sweet Potatoes
If you are used to the starchy and creamy mashed potato, try this mashed potato for a change. It’s sweeter, starchier, and creamier – a superb side dish!
Peel and cut sweet potatoes into 2-inch cubes.
Place sweet potatoes in a large pot and cover with water by an inch.
Season with 3 teaspoons of salt and bring to a boil, reduce heat down to medium-low and allow to simmer for about 15 to 30 minutes or until tender.
Drain cooked potatoes, add in the butter, sour cream, garlic, remaining salt, and Parmesan cheese.
Mash with a potato masher until smooth, adding milk for a smoother and lighter mash.
Garnish with parsley, serve.
