How To Make Buttermilk Mashed Potatoes And Chives Recipe

Ingredients
- 2lbsmedium Yukon gold potatoes,(6 to 7 pieces) peeled, cubed
- ¾cuplow-fat buttermilk,plus an additional 2 tbsp
- 1tbsplight butter
- dashkosher salt and fresh ground pepper,to taste
- ¼cupfresh chives
Instructions

Put the potatoes in a large pot with salt and add enough water to cover the potatoes. Bring to a boil.

Cover and reduce the heat. Simmer for 20 minutes, or until the potatoes are tender.

Drain and return the potatoes to the pot.

Add the buttermilk, light butter, and remaining ingredients. Mash until smooth.

Season with salt and pepper to taste.
