How To Make Turkey Breast with Ginger-Scallion Sauce
The best way to prepare this leftover turkey breast recipe is to poach in turkey stock, but you can also just slice and top with its ginger-scallion sauce.

- 1½cupsscallions,thinly sliced
- 6tbspfresh ginger,minced
- ¼cupvegetable oil
- 1tspsherry vinegar
- 1½tspsoy sauce,light or low sodium
- kosher salt
- ¾lbturkey breast
- turkey cracklings
Instructions

In a medium bowl, combine the sliced scallions with the minced ginger, vegetable oil, sherry vinegar, and soy sauce. Season with kosher salt.

Cut the turkey breast into 6 thick slices. Arrange the turkey slices on individual plates and spoon the ginger-scallion sauce on top.
