How To Make Turkey Mediterranean Casserole

With its combination of pasta, turkey, tomatoes, and herbs, this Mediterranean casserole is a filling dish with loads of fresh flavors.

Ingredients

  • 1lbfusilli pasta
  • 3cupsturkey,chopped
  • cupsun dried tomatoes,drained
  • 1canartichokes,(14 oz), drained
  • 1jarlindsay pitted kalamata olives,(7 oz), roughly chopped
  • 1tfresh parsley,chopped
  • 2tfresh basil,chopped
  • salt and pepper,to taste
  • 2cupsmarinara sauce
  • 1canlindsay black olives,(4.25 oz), chopped
  • 3cupsmozzarella cheese

Instructions

  1. Preheat oven to 350 degrees F. Cook the pasta according to package directions. Rinse and drain.

  2. Add the pasta to a large bowl with turkey, sun dried tomatoes, artichokes, Kalamata olives, parsley, basil, salt and pepper to taste, and marinara sauce. Mix together.

  3. In a 9×13-dish layer half of the pasta evenly. Top with half of the cheese. Put the rest of the pasta on the top. Layer with the chopped black olives. Top with remaining cheese.

  4. Bake for 20 to 25 minutes or until cheese is bubbly and casserole is heated through.
