
How To Make Mini Bell Pepper Nachos with Turkey
Who knew that mini bell peppers could be a nacho alternative? In this simple snack recipe, bell pepper nachos are loaded with turkey and lots of cheese!

Ingredients
- Olive oil spray
- 1lb93% lean ground turkey
- 1garlic clove,minced
- ¼onion,minced
- 1tbspfresh cilantro,or parsley, chopped
- 1tspgarlic powder
- 1tspcumin powder
- 1tspkosher salt
- ¼cuptomato sauce
- ¼cupchicken broth
- 21mini rainbow peppers,halved and seeded
- 1cupcheddar cheese,sharp shredded
- 2tbsplight sour cream,thinned with 1 tbsp water
- 2tbspsliced black olives
- 1jalapeno,sliced thin, optional
- Chopped cilantro,for garnish
Instructions

Preheat oven to 400 degrees F and line large baking tray with parchment or aluminum foil. Lightly spray with oil.

Spray oil in a medium nonstick skillet over medium heat. Sauté onion, garlic, and cilantro for about 2 minutes.

Add ground turkey, salt, garlic powder, cumin. Cook meat for 4 to 5 minutes until meat is completely cooked through. Add ¼ cup of tomato sauce and chicken broth; mix well and simmer on medium for about 5 minutes then remove from heat.

Meanwhile, arrange mini peppers in a single layer; cut-side up close together.

Fill each with cooked ground turkey mixture, then top with shredded cheese and jalapeno slices, if using.

Bake for about 8 to 10 minutes, until cheese is melted.

Remove from oven and top with black olives, sour cream, and cilantro. Serve immediately.
