  • 3 lbs eye of round roast
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 cup beef broth


  1. Preheat the oven to 325°F.

  2. Rub the eye of round roast with olive oil, salt, black pepper, garlic powder, dried thyme, and dried rosemary.

  3. Heat a large oven-safe skillet over medium-high heat and sear the roast on all sides until browned.

  4. Transfer the skillet to the preheated oven and roast for about 1 hour and 45 minutes, or until the internal temperature reaches 135°F for medium-rare.

  5. Remove the roast from the skillet and let it rest for 15-20 minutes before slicing.

  6. While the roast is resting, pour the beef broth into the skillet and scrape up any browned bits from the bottom. Simmer the broth for a few minutes to reduce and thicken the sauce.

  7. Slice the roast and serve with the flavorful pan sauce.
