How To Make Tender Eye of Round Roast Recipe

Preheat the oven to 325°F.
Rub the eye of round roast with olive oil, salt, black pepper, garlic powder, dried thyme, and dried rosemary.
Heat a large oven-safe skillet over medium-high heat and sear the roast on all sides until browned.
Transfer the skillet to the preheated oven and roast for about 1 hour and 45 minutes, or until the internal temperature reaches 135°F for medium-rare.
Remove the roast from the skillet and let it rest for 15-20 minutes before slicing.
While the roast is resting, pour the beef broth into the skillet and scrape up any browned bits from the bottom. Simmer the broth for a few minutes to reduce and thicken the sauce.
Slice the roast and serve with the flavorful pan sauce.
