Ingredients

  • 4 chicken thighs
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 2 tbsp dried oregano
  • 1/2 tsp red pepper flakes
  • 1/2 cup white wine
  • 1 cup chicken broth
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Season the chicken thighs with salt and pepper on both sides.

  3. In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken thighs, skin-side down, and cook until golden brown, about 5 minutes.

  4. Flip the chicken thighs and add the minced garlic, dried oregano, and red pepper flakes. Cook for an additional 2 minutes.

  5. Deglaze the skillet with white wine, scraping up any browned bits from the bottom of the pan.

  6. Add the chicken broth to the skillet and bring to a simmer. Transfer the skillet to the preheated oven and cook for 30 minutes, or until the chicken is cooked through.

  7. Sprinkle the grated Parmesan cheese over the chicken and broil for 2-3 minutes, until the cheese is golden and bubbly.

  8. Remove from the oven and let the chicken rest for a few minutes before serving. Garnish with fresh parsley.
